History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Chenna Kulfi Recipe

  • Cottage Cheese grated 3/4 cup

  • Corn Flour 2 tablespoon

  • Skimmed milk 5 cup

  • Sugar 1/2 cup

  • Green cardamoms crushed 3-4

  • Raisins 1 tablespoon

  • Almonds slivered 1 tablespoon

Method

Step 1

Mix cornflour with quarter cup milk. Boil remaining milk with sugar in a deep non-stick pan. Reduce heat and simmer for about twenty minutes or till reduced to half.

Step 2

Add green cardamoms and mix well. Add cornflour mixture and cook, stirring continuously, for two to three minutes. Add cottage cheese, raisins and almonds.

Step 3

Mix well and remove from heat. Pour into kulfi moulds, cover with lids and freeze in the refrigerator till set. Unmould, slice and serve.
