Ingredients

  • 200 grams chicken breasts, cut into small cubes
  • ¼ cup rice, soaked and drained
  • 1 tablespoon oil
  • 2 tablespoons chopped garlic
  • 1 tablespoon chopped celery
  • 1 medium onion, chopped
  • 1 carrot, peeled and cut into small cubes
  • 4 cups chicken stock
  • Salt to taste
  • ½ teaspoon crushed black peppercorns
  • 2 tablespoons chopped spring onion greens 

Method

  1. Heat the oil in a non-stick pan, add the garlic and sauté for ten seconds. Add the celery and onion and sauté till the onion turns light brown.
  2. Grind half the quantity of the rice into a smooth paste. 
  3. Add the carrots and mix well. Add the chicken, remaining rice and rice paste, mix well and sauté for a minute.
  4. Add the stock, salt, crushed peppercorns and mix well and cook till the chicken and rice gets cooked completely.
  5. Garnish with the spring onion greens and serve piping hot.
