Choco Rum Slice

Ingredients list for Choco Rum Slice

  • 8-10 Chocolate Biscuits
  • 2 tablespoons Rum
  • 1 cup Sultanas
  • 1/2 cup Walnuts shelled
  • 1/2 cup Butter
  • 1/2 cup Condensed milk
  • 1 Egg
  • 1 teaspoon Cinnamon powder
  • 125 grams Dark chocolate

Method

  1. Crush biscuits to a coarse powder. Wash and pat dry sultanas. Dry roast walnuts and chop roughly. In a large bowl combine crushed biscuits, sultanas and chopped walnuts.
  2. Lightly mix and set aside. Combine butter and condensed milk in a pan, cook over low heat till butter melts. Remove from heat, whisk in egg, cinnamon and rum.
  3. Add the butter mixture to the biscuit mixture and stir with a wooden spoon until well combined. Line the base and sides of a square cake tin with aluminum foil and grease the foil with butter.
  4. Press the above mixture evenly into the prepared cake tin. Grate and place chocolate in a pan. Stir over barely simmering water until melted. Remove from heat and spread chocolate evenly over the biscuit mixture using a palette knife.
  5. Mark into slices and refrigerate until firm. Cut into slices and serve. Store in airtight container under refrigeration.
