Ingredients list for Chocolate Chip Lava Cake

  • 50 grams Chocolate chips
  • + for greasing Butter 25 grams
  • 170 grams White chocolate roughly chopped
  • 75 grams Castor sugar (caster sugar)
  • 2 Eggs
  • 1 teaspoon Vanilla essence
  • 40 grams Refined flour (maida)
  • a pinch Salt
  • for dusting Cocoa powder

Method

  1. Preheat oven to 180° C.
  2. Cream together butter and sugar in a bowl with beater.
  3. Melt white chocolate in microwave for 30 seconds. Cool down to room temperature.
  4. Break egg and add to the bowl and mix well.
  5. Add melted white chocolate and mix well. Add vanilla essence and mix well.
  6. Mix refined flour and chocolate chips in a small bowl and this to the batter along with salt and fold to mix.
  7. Keep the silicon moulds on a baking tray, grease silicon moulds with butter, dust with cocoa powder. Fill the moulds with batter and tap lightly.
  8. Place the moulds on a baking tray and bake in the preheated oven for 14 minutes.
  9. Serve hot.
