Ingredients list for Chocolate Rice Pudding
- 2 tablespoons Cocoa powder
- 5 tablespoons Short grain Rice
- 3 cups Milk
- 1 Bay leaf
- 4 Eggs
- 2 tablespoons Sugar
- 4 tablespoons Brown sugar
- 1/2 teaspoon Vanilla essence
- 50 grams White chocolate roughly chopped
- 225 millilitres Fresh cream
- a few Orange peel thin strips
Method
- Heat milk in a deep non stick pan. Add bay leaf and rice and cook till the rice is soft.
- Meanwhile heat sufficient water in another deep non stick pan.Break 4 eggs and separate yolks and whites and put in separate bowls.
- Whisk the yolks, add sugar, 2 tbsps brown sugar and cook, stirring continuously, over hot water in the second pan kept over medium heat.
- Cook till the mixture thickens and coats the back of a spoon. Add cocoa powder and whisk so that it blends well. Add vanilla essence and mix.
- Once the rice is soft, discard the bay leaf and let it cool slightly. Add white chocolate to the custard in the bowl and mix well.
- Add cream and mix. Add the rice, little by little, and mix well. Pour the mixture into ramekin moulds and let them cool to room temperature.
- Keep them in a refrigerator to chill. Sprinkle some brown sugar and serve garnished with a few orange peel strips or you can also caramalise the sugar with a brulee torch.
