Ingredients for Chorizo Stuffed Mushrooms Recipe

  • Sausages chorizo, roughly chopped 2-3

  • Button mushrooms 8-12

  • Fresh rosemary sprigs, chopped a few

  • Red wine 2-3 tablespoons

  • Crushed black peppercorns to taste

  • Eggs beaten 2

  • Bread crumbs for coating

  • Oil for deep-frying


Step 1

Remove the stems of the mushrooms and grind the stems along with the chopped sausages into a coarse paste. Reserve the mushroom caps.

Step 2

Heat a non-stick pan. Add the ground paste and cook for a minute, stirring continuously.

Step 3

Add the rosemary and mix well. Add the wine and mix. Add crushed peppercorns and mix. Transfer on a plate and cool.

Step 4

Spread the breadcrumbs on another plate.

Step 5

Stuff the mushroom caps with the cooked mixture. Dip in the beaten eggs and coat with the breadcrumbs and repeat the process once more.

Step 6

Heat sufficient oil in a pan. Deep-fry stuffed mushrooms till golden. Drain on absorbent paper.

Step 7

Serve hot.
