Ingredients list for Coconut Cake

  • 2 cups Refined Flour
  • 2 tablespoon Fresh Coconut
  • 1 cup Butter
  • 1 cup Sugar
  • 3 Eggs
  • 1 teaspoon Vanilla essence
  • 3/4 cup Coconut scraped
  • 1 cup Coconut milk

Method

  1. Mix refined flour and baking powder and sift. In a mixing bowl beat together butter, sugar, eggs and vanilla essence till soft and fluffy. Blend in scraped coconut. Add flour to this mixture alternating with coconut milk, until both have been used and a smooth batter is formed.
  2. Grease a loaf pan and line with a brown paper. Pour the batter into the prepared pan and bake in a preheated oven at 180°C for half an hour, or till done. To test insert a skewer, if it comes out clean the cake is done. Cool the cake on rack. Slice and serve.
