Ingredients list for Coconut Cream

  • 1 cup Jasmine rice
  • 4 cups Coconut milk
  • 3 tablespoons Mixed fruit jam
  • 1/2 Lemon
  • 1/4 cup Sugar
  • 1/2 cup Cream

Method

  1. Cook Jasmine rice in coconut milk in a deep non-stick pan till soft and thick Heat a non-stick pan, add mixed fruit jam and let it melt.
  2. Add ¼ cup water and mix. Add juice of ½ lemon and mix.
  3. Add sugar to the rice and stir till it dissolves.
  4. Switch off the heat. Add cream and mix.
  5. Take 4 shot glasses, put 2 tbsps of the jam sauce in each glass.
  6. Top it with the coconut rice mixture and serve hot or cold as per your choice.
