By Sanjeev Kapoor 04 May 2016 in Recipes Course New Update Main Ingredients Coconut Milk, Rice Flour Cuisine Fusion Course Snacks and Starters Prep Time 16-20 minutes Cook time 26-30 minutes Serve 4 Taste Sweet Level of Cooking Moderate Others Non Veg Ingredients list for Coconut Pancakes 2 1/2 cups Coconut Milk 3/4 cup Rice Flour 3 Eggs 1/2 cup Sugar 1 cup Scraped coconut 2 tablespoons Oil To Serve 1 cup Fresh coconut grated Method Place coconut milk, rice flour and eggs in a bowl. Blend well with a hand blender. Add sugar and blend again till the sugar melts. Add one cup coconut and mix well. Heat oil in a non-stick tawa. Pour a ladleful of batter on it and cook till the underside is covered with brown flecks. Turn over and cook the other side similarly. Make more pancakes. Keep them warm. Roll each pancake into a tight cylinder and serve warm.
