Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Coconut Rice Fritters Recipe

  • Desiccated Coconut 1/3 cup

  • Cooked Rice 2/3 cup

  • Sugar 3 tablespoons

  • Coconut milk 1/2 cup

  • Dark chocolate chopped 1/2 cup

  • Oil to deep fry

  • Icing sugar to sprinkle

Method

Step 1

Place the desiccated coconut, cooked rice, sugar and coconut milk in a bowl and mix well.

Step 2

Divide the mixture into equal portions.

Step 3

Stuff each portions with a spoonful of chocolate and shape them into balls.

Step 4

Heat sufficient oil in a kadai and deep-fry the fritters till golden brown.

Step 5

Drain on absorbent paper. Sprinkle icing sugar on top and serve hot.
