Ingredients list for Coconut Rice Fritters

  • 1/3 cup Desiccated Coconut
  • 2/3 cup Cooked Rice
  • 3 tablespoons Sugar
  • 1/2 cup Coconut milk
  • 1/2 cup Dark chocolate chopped
  • to deep fry Oil
  • to sprinkle Icing sugar

Method

  1. Place the desiccated coconut, cooked rice, sugar and coconut milk in a bowl and mix well.
  2. Divide the mixture into equal portions.
  3. Stuff each portions with a spoonful of chocolate and shape them into balls.
  4. Heat sufficient oil in a kadai and deep-fry the fritters till golden brown.
  5. Drain on absorbent paper. Sprinkle icing sugar on top and serve hot.
