Ingredients

  • 2 medium green apples
  • 1 tbsp butter
  • Salt to taste
  • 3 tsps sugar
  • Black pepper powder to taste
  • 1 cup white wine
  • 1 cup chilled vegetable stock
  • ¼ medium red apple

Method 

  1. Chop green apples roughly. Heat butter in a deep non stick pan.  Add apples and sauté for a minute.
  2. Add salt, sugar and black pepper powder and sauté till apples are lightly browned.
  3. Add white wine and cook till apples soften. Transfer into a blender jar, add chilled vegetable stock and blend till smooth.
  4. Finely chop red apple for garnish. 
  5. Pour the blended soup into a serving bowl, garnish with red apple and serve cold.
