Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for College Sandwich Recipe

  • White Bread Slices 8

  • Cauliflower

  • Cauliflower florets separated and blanched 1/2 small

  • Carrot chopped and blanched 1/2 medium

  • French beans chopped and blanched 4-5

  • Oil 1 tablespoon

  • Ginger finely chopped 1/2 inch piece

  • Onion finely chopped 1 small

  • Red chilli powder 1/2 teaspoon

  • Green chilli finely chopped 1

  • Salt to taste

  • Bhuna masala 100 grams

  • Potatoes boiled, peeled and grated 2 medium

  • Chaat masala 1/4 teaspoon

  • Cheese grated 1/2 cup

  • Butter 4 tablespoons


Step 1

Drain and coarsely grind together cauliflower, carrot and French beans. Heat oil in a non-stick pan. Add ginger and sauté for a minute. Add onion and sauté for 2-3 minutes.

Step 2

Add the ground vegetables and sauté for a minute. Add red chilli powder, green chilli and salt and mix well.

Step 3

Add bhuna masala and mix. Add potatoes, chaat masala and mix well. Transfer this mixture into a bowl.

Step 4

Place 4 bread slices on the work top. Divide the vegetable mixture into 4 parts. Place a portion of the mixture on each bread slice.

Step 5

Top it with cheese. Cover with the remaining bread slices.

Step 6

Apply ½ tbsp butter on each side of the sandwiches. Preheat a griller for 3-4 minutes. Place the sandwiches in the griller and grill for 3-4 minutes. Serve hot.
