Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Coriander Lavash Recipe

  • Refined Flour 3/4 cup

  • Roasted Coriander Seeds chopped 1 teaspoon

  • Roasted coriander seeds crushed 4 tablespoons

  • Dry yeast 1/2 teaspoon

  • Sugar a pinch

  • Olive oil 2 1/2 tablespoons

  • Salt to taste

Method

Step 1

Combine yeast and sugar with half cup of warm water in a bowl.

Step 2

Cover and set aside for ten minutes or till frothy.

Step 3

Sift flour and salt into a bowl.

Step 4

Make a well in the centre and add the yeast mixture and enough water. Knead well into a smooth dough.

Step 5

Cover with a damp cloth and set aside for half an hour or till the dough doubles in volume.

Step 6

Divide the dough into equal portions and roll out into a circular disc. Cut each disc into triangles.

Step 7

Brush the triangles with a little oil and sprinkle coriander leaves and coriander seeds on top.

Step 8

Press lightly.Place the triangles on a microwave proof dish and cook on Microwave HIGH (100%) for two minutes or till golden brown.

Step 9

Serve hot.
