Ingredients 

  • ½ cup polenta
  • ½ cup processed cheese, grated
  • 1 cup refined flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • Salt to taste
  • 2 green chillies chopped
  • 2-3 chives chopped
  • 1 small onion chopped
  • 1 tablespoon oil
  • ¾ cup milk
  • 1 stalk spring onion greens chopped

Method

  1. Preheat the oven to 180˚C.
  2. Sieve together refined flour, baking powder, baking soda and salt into a mixing bowl.
  3. Add polenta, green chillies, chives, onion, processed cheese, oil, milk and spring onion greens and mix well.
  4. Pour the batter into the muffin moulds, place the moulds in the preheated oven and bake for 15-20 minutes.
  5. Remove the muffins from the moulds and serve.
