Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Cook time : 11-15 minutes

Ingredients for Corn Mushroom on Toast Recipe

  • Corn Kernels boiled 1 1/2 cups

  • Button Mushrooms 20-22

  • Brown bread slices 8

  • Butter 1 tablespoon + to apply on the toasts

  • Oil 1 teaspoon

  • Schezwan chutney 3 tablespoons

  • Few fresh mint leaves

Method

Step 1

Coarsely grind boiled corn kernels and slice the mushrooms.

Step 2

Heat butter and oil in a non-stick pan. Add mushrooms and cook for 3-4 minutes.

Step 3

Add Schezwan chutney and mix well. Add ground corn and sauté for 1-2 minutes. Switch off the heat.

Step 4

Toast brown bread slices. Apply butter on the toasts. Spread the corn mushroom mixture on the toasts. Garnish with mint leaves and serve.
