Ingredients list for Crab And Chilli Crisps

  • 250 grams Crab meat boiled and shredded
  • 2 small Fresh red chillies
  • 1 tablespoon Extra virgin olive oil
  • 8 White bread slices crust trimmed
  • 1/2 medium Onion
  • 2 tablespoons Eggless mayonnaise
  • 1 teaspoon Lemon juice
  • as required Chilli garlic sauce
  • a few sprigs Fresh parsley

Method

  1. Heat 1 tbsp extra virgin olive oil in a non stick pan. Cut 2 roundels from each bread slice with a round cookie cutter. The remaining bread can be ground in a mixer to make crumbs to be used as and when required.
  2. Saute the bread roundels in the non stick pan, turning sides, till golden on both sides.Finely chop fresh red chillies and put into a bowl. Finely chop onion and add to the chillies.
  3. Add eggless mayonnaise and crab meat and mix well. Add lemon juice and mix well. Chill the mixture in the refrigerator for a little while. Arrange the bread roundels on a serving plate. Drizzle a few drops of chilli garlic sauce over each roundel.
  4. Make small quenelles of the crab meal mixture with two teaspoons and place over each roundel. Put a few drops of chilli garlic sauce on top of the crab mixture and keep a small sprig of parsley over it and serve immediately.
