Ingredients 

  • 4 medium potatoes
  • Salt to taste
  • 2 tablespoons olive oil
  • 1/2 teaspoon mixed herbs
  • 1/2 teaspoon crushed black peppercorns

Method

  1. Preheat oven to 200ºC. Heat sufficient water in a deep non stick pan.
  2. Quarter the potatoes vertically, cut into ½ inch cubes.
  3. Add them to the water with salt and parboil. Line a baking tray with a silicon sheet.
  4. Drain the parboiled potatoes well and put them back in the pan and cook till dry.
  5. Drizzle olive oil over them. Sprinkle mixed herbs, crushed black peppercorns and salt and mix well.
  6. Spread them on the tray and roast them in the preheated oven till crisp.
  7. Serve hot.
