And did you always think that eating a potato will make you fat?
Well, don’t – it is a surprising source of vitamin C and provides useful amounts of starch, thiamine and niacin and around a hundred grams will provide about eighty calories.

Ingredients for Cubed Roast Potatoes Recipe

  • Potatoes 4 medium

  • Salt to taste

  • Olive oil 2 tablespoons

  • Mixed herbs 1/2 teaspoon

  • Crushed black peppercorns 1/2 teaspoon

Method

Step 1

Preheat oven to 200ºC. Heat sufficient water in a deep non stick pan.

Step 2

Quarter the potatoes vertically, cut into ½ inch cubes.

Step 3

Add them to the water with salt and parboil. Line a baking tray with a silicon sheet.

Step 4

Drain the parboiled potatoes well and put them back in the pan and cook till dry.

Step 5

Drizzle olive oil over them. Sprinkle mixed herbs, crushed black peppercorns and salt and mix well.

Step 6

Spread them on the tray and roast them in the preheated oven till crisp.

Step 7

Serve hot.
