Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Dahi Ka Achar Recipe

  • Yogurt 500 grams

  • Mustard Seeds 1 1/2 teaspoon

  • Roasted cumin powder 1/2 teaspoon

  • Roasted onion seed powder 1/2 teaspoon

  • Ginger paste 3/4 teaspoon

  • Asafoetida a pinch

  • Mustard oil 2 tablespoons

Method

Step 1

Tie up the yogurt in muslin cloth and hang it, preferably in the refrigerator, till all the water drains away. Grind mustard seeds with a little water and salt. Rest it for two hours. Take hung yogurt in a bowl, add mustard paste, roasted cumin seed powder, roasted onion seed powder, ginger paste, asafoetida and mix well. Add mustard oil and mix again. Serve preferably after twelve hours.
