Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Dahi Ma Bheeda Recipe

  • Okra 500 grams

  • Yogurt to taste

  • Oil 3 tablespoons

  • Garlic paste 1 tablespoon

  • Ginger paste 1 tablespoon

  • Red chilli powder 1/2 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Coriander powder 1 teaspoon

  • Yogurt beaten 350 grams

Method

Step 1

Remove the head of okra and cut into ½ inch slices. Sprinkle with little salt and mix lightly. Heat oil in a pan and sauté till crisp.

Step 2

Colour should not change. Remove on a kitchen paper when done. In the same oil add ginger-garlic paste and sauté. Add the spices and sauté for half minute.

Step 3

Remove the pan from the heat and add yogurt and simmer for few minutes. Add okra seasoned with salt. Simmer for 3-4 minutes. Serve hot with roti or rice.
