How to make Dairy Free Spinach Soup -

Like the name suggests, this spinach soup has no dairy product.

Treasure house of vitamins and minerals, spinach must be included in the week's menu. The usage can be varied: chopped spinach leaves cooked with potatoes is a semi-wet vegetable with rotis, a few spinach leaves thrown in with mixed vegetables and turned into a soup is lovely on a cold winter night, chopped and blanched spinach makes a different sort of raita, spinach puree can be used in cutlets or kababs, the list goes on.

Ingredients for Dairy Free Spinach Soup Recipe

  • Spinach 1 medium bunch

  • Brown Rice soaked in 2 cups of water 1/2 cup

  • Oil 1 tablespoon

  • Garlic finely chopped 1 tablespoon

  • Potatoes 2 medium

  • Soya milk 1 cup

  • Salt to taste

  • Black pepper powder 1 teaspoon + for sprinkling

  • A few thin strips of red capsicum for garnishing

  • Onions 2 medium


Step 1

Heat 1 cup water in a deep non-stick pan, add spinach and cook.

Step 2

Quarter onions.

Step 3

Heat oil in another non-stick pan, add garlic and onions and sauté for a minute. Cut potatoes in big cubes and add to the second pan.

Step 4

Add brown rice with the water in which it was soaked and cook till brown rice and potatoes are done. Switch off the heat.

Step 5

Add the brown rice mixture to the spinach mixture and mix well.

Step 6

Switch off the heat, strain, cool and grind with soya milk to a smooth puree.

Step 7

Heat this puree in another deep non-stick pan. Add salt and pepper powder and mix well. Cook for 2-3 minutes.

Step 8

Pour the soup into a soup bowl, sprinkle pepper powder, garnish with red capsicum strips and serve immediately.
