Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Dalia Pulao _SK Khazana Recipe

  • Broken wheat 1 cup

  • Ghee 2 tablespoons

  • Cumin seeds 1/2 teaspoon

  • Cloves 3

  • Black peppercorns 5-6

  • Green cardamoms 2

  • Bay leaf 1

  • Onion large, sliced 1

  • Turmeric powder 1/2 teaspoon

  • Salt to taste

  • Carrot small,cut into small diamonds 1

  • Cauliflower florets 10-12

  • French beans diagonally cut into 1 inch pieces 3-4

  • Green peas 1/4 cup

  • Fresh coriander sprig for garnish

  • Raita to serve

Method

Step 1

Heat ghee in a pressure cooker, add cumin seeds, cloves, black peppercorns, green cardamoms and bay leaf, mix and sauté till fragrant.

Step 2

Add onion, mix and sauté for 1-2 minutes. Add broken wheat, mix and sauté for 5-6 minutes on medium heat.

Step 3

Add turmeric powder, salt, carrot, cauliflower, French beans and green peas, mix well and sauté for 1-2 minutes. Add 2½ cups hot water and mix well. Cover and cook under pressure till 4-5 whistles are released.

Step 4

Open the lid of the cooker once the pressure reduces completely. Transfer onto a serving plate and garnish with fresh coriander sprig. Serve hot with raita.
