Ingredients for Date and Walnut Cake - SK Khazana Recipe

  • Seedless dates chopped 1/4 cup + to sprinkle

  • Walnuts chopped 1/4 cup + to sprinkle

  • Butter 1 cup

  • Castor sugar 3/4 cup

  • Eggs 3

  • Vanilla essence 2 teaspoon

  • Refined flour 1 cup + 2 tablespoons

  • Baking powder 1 teaspoon

  • Salt to taste

  • Milk 1/4 cup

  • Icing sugar for dusting

Method

Step 1

Preheat an oven to180º C. Grease a loaf tin, sprinkle some dry flour all over and remove excess flour.

Step 2

Take butter and sugar in a mixing bowl and beat with a hand blender till light and fluffy.

Step 3

Break in 1 egg at a time and beat till well incorporated.

Step 4

Add vanilla essence and beat again. Sieve together refined flour, baking powder and salt into the bowl and fold in with a spatula.

Step 5

Take walnuts and dates in another bowl, add 2 tablespoons flour and mix well.

Step 6

Add this mixture to the batter and fold in. Add milk and mix well to form a lump free batter.

Step 7

Pour the batter into the prepared loaf tin and gently tap it on the worktop to level the surface. Sprinkle some dates and walnuts on top.

Step 8

Keep the loaf tin in the preheated oven and bake for 35-40 minutes.

Step 9

Take the tin out of the oven and let it cool down to room temperature. Slice, arrange the slices on a serving platter, dust some icing sugar on top and serve.
