Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Diet Chaat - SK Khazana Recipe

  • dried white peas (safed vatana)

  • turmeric powder 1/2 teaspoon

  • A pinch of asafoetida (hing)

  • onion medium 1

  • tomato medium 1

  • Green chutney for drizzling

  • Date and tamarind chutney for drizzling

  • Red chilli-garlic chutney for drizzling

  • Chopped raw mango as required

  • Lemon juice as required

  • Black salt to taste

  • Chaat masala for sprinkling

  • Roasted cumin powder for sprinkling

  • Chilled yogurt for drizzling

  • Chopped fresh coriander leaves for garnish

Method

Step 1

Drain and put white peas in a pressure cooker, add turmeric powder, asafoetida and 3 cups water, mix well. Cover and cook under pressure till 4-5 whistles are released.

Step 2

Finely chop onion and tomato.

Step 3

Open the pressure cooker once the pressure has reduced completely. Mix well. Transfer into serving bowls.

Step 4

Sprinkle onion, drizzle green chutney, date and tamarind chutney and red chilli-garlic chutney. Sprinkle tomato, raw mango and squeeze lemon on top.

Step 5

Sprinkle black salt, chaat masala and roasted cumin powder. Drizzle chilled yogurt and garnish with coriander leaves. Serve immediately.
