How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Dudhi Kadamb Recipe

  • Rice 1 cup

  • Red pumpkin 2 cups

  • Coconut scraped 1/4 cup

  • Jaggery (gur) grated 1/4 cup

  • Salt to taste

  • Tender banana leaves or turmeric leaves 4

  • Pure ghee 4 teaspoons

Method

Step 1

Wash rice and drain completely. Spread on a cloth and let it dry. When it is completely dry grind to a coarse powder. Mix together rice powder, grated red pumpkin, scraped coconut, jaggery, salt well.

Step 2

Cover and let it stand for about an hour. Divide into eight equal portions. Cut each banana leaf or tamarind leaf into two pieces.

Step 3

Wrap each portion of pumpkin mixture in the banana leaf and secure with a string. Steam-cook in a steamer till done. This may take fifteen to twenty minutes. Serve hot drizzled with pure ghee.
