Ingredients list for Dudhi Kadamb

  • 1 cup Rice
  • 2 cups Red pumpkin
  • 1/4 cup Coconut scraped
  • 1/4 cup Jaggery (gur) grated
  • to taste Salt
  • 4 Tender banana leaves or turmeric leaves
  • 4 teaspoons Pure ghee

Method

  1. Wash rice and drain completely. Spread on a cloth and let it dry. When it is completely dry grind to a coarse powder. Mix together rice powder, grated red pumpkin, scraped coconut, jaggery, salt well.
  2. Cover and let it stand for about an hour. Divide into eight equal portions. Cut each banana leaf or tamarind leaf into two pieces.
  3. Wrap each portion of pumpkin mixture in the banana leaf and secure with a string. Steam-cook in a steamer till done. This may take fifteen to twenty minutes. Serve hot drizzled with pure ghee.
