Ingredients for Fish with Roasted Garlic Recipe

  • Basa Fish Fillets cut into two pieces each 2

  • Baby Brinjals 8-10

  • Large garlic cloves peeled 10-12

  • Red capsicum 1 medium

  • Salt to taste

  • Crushed black peppercorns to taste

  • Olive oil 2 tablespoons

  • Lemon 1

  • Juice of ½ lemon

  • Fresh basil leaves 6-8


Step 1

Preheat oven at 200º C.

Step 2

Cut red capsicum into small pieces and put into a bowl.

Step 3

Halve baby brinjals and add to the same bowl. Add salt, garlic cloves, crushed peppercorns and 1 tbsp olive oil and mix well.

Step 4

Grate the rind of the lemon and add and mix well.

Step 5

Keep the bowl in the oven and cook till the brinjals become soft. Remove from the oven.

Step 6

Increase the temperature of the oven to 220º C.

Step 7

Place fish in a cake tin, add lemon juice, crushed peppercorns and remaining olive oil and rub well. Put the tin in the preheated oven and bake for 12-15 minutes.

Step 8

Mix basil leaves and roasted vegetables in a bowl.

Step 9

Transfer the mixture onto a serving platter and top with baked fish and serve immediately.
