Ingredients list for Fish with Roasted Garlic
- 2 Basa Fish Fillets cut into two pieces each
- 8-10 Baby Brinjals
- 10-12 Large garlic cloves peeled
- 1 medium Red capsicum
- to taste Salt
- to taste Crushed black peppercorns
- 2 tablespoons Olive oil
- 1 Lemon
- Juice of ½ lemon
- 6-8 Fresh basil leaves
Method
- Preheat oven at 200º C.
- Cut red capsicum into small pieces and put into a bowl.
- Halve baby brinjals and add to the same bowl. Add salt, garlic cloves, crushed peppercorns and 1 tbsp olive oil and mix well.
- Grate the rind of the lemon and add and mix well.
- Keep the bowl in the oven and cook till the brinjals become soft. Remove from the oven.
- Increase the temperature of the oven to 220º C.
- Place fish in a cake tin, add lemon juice, crushed peppercorns and remaining olive oil and rub well. Put the tin in the preheated oven and bake for 12-15 minutes.
- Mix basil leaves and roasted vegetables in a bowl.
- Transfer the mixture onto a serving platter and top with baked fish and serve immediately.
