This recipe is from FoodFood TV channel By Sanjeev Kapoor 04 Nov 2014 in Recipes Course New Update Main Ingredients Shelled green peas, Butter Cuisine French Course Soups Prep Time 11-15 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Advertisment Ingredients list for French Pea and Mint Soup 1 1/2 cups Shelled green peas 2 tablespoons Butter 1 medium Onion roughly chopped 2-3 cloves Garlic crushed 1 tablespoon Leeks chopped 2-3 Iceberg lettuce leaves to taste Salt to taste Black pepper powder 7-8 Mint leaves as required Vegetable stock 2 tablespoons Cream few Red capsicum thin strips Method Advertisment Heat butter in a non stick pan, add onion, garlic and leeks and saute for 1 minute. Add green peas, lettuce leaves, 1 cup water, salt and pepper powder and mix. Add mint leaves and let the mixture come to a boil. Cover and cook for 2-3 minutes. Strain the peas and cool. Put them into a mixer jar and puree with a little cold stock. Pour this back into the pan and heat. Adjust salt. Add cream and mix. To serve place red capsicum strips in the centre of a soup bowl, pour the soup all around it and serve hot.
