Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Gahat ka Shorba Recipe

  • Horse gram (kulith) , soaked overnight and boiled 2 cups

  • Asafoetida 1/4 teaspoon

  • Garlic , finely chopped 1 tablespoon

  • Ginger , finely chopped 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Mustard seeds 1 teaspoon

  • Coriander seeds 1 tablespoon

  • Green chillies , finely chopped 2-3

  • Fresh coriander stems , chopped 2 tablespoons

  • Black peppercorns , crushed to taste

  • Salt to taste

  • Fresh mint sprigs to garnish


Step 1

Heat oil in a non-stick pan. Add asafoetida, garlic, ginger, cumin seeds, mustard seeds and coriander seeds and sauté till fragrant.

Step 2

Add green chillies and coriander stems and mix. Add horse gram, crushed peppercorns and salt, mix well. Add some water, cover and cook for 6-8 minutes.

Step 3

Switch off heat, blend the gram mixture with a hand blender and strain.

Step 4

Garnish with mint sprigs and serve hot.
