Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Gaur Lapsi Recipe

  • Wholewheat Flour 1/2 cup

  • jaggery 1/2 cup

  • Jaggery (gur) grated 3/4 cup

  • Pure ghee 3/4 cup

  • Green cardamom powder 1/2 tablespoon

  • Almonds blanched and slivered 8-10


Step 1

Heat half of the ghee in a kadai. Roast fine wheat flour on low heat till fragrant and golden brown. Heat remaining ghee and roast coarse wheat flour on low heat till fragrant and golden brown.

Step 2

Meanwhile soak jaggery in two cups of hot water. Stir to break lumps. Cook on low heat till the jaggery is completely dissolved. Place the kadai with roasted flour on low heat and slowly pour in jaggery water.

Step 3

It bubbles immediately so stir briskly and carefully. Add green cardamom powder and stir. Cover and cook on low heat till ghee separates.

Step 4

Stir well and mix in almond slivers. Serve hot.
