Gaur Lapsi

Coarse whole wheat flour and fine flour cooked with jaggery, flavoured with cardamom powder, garnished with almonds. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Gaur Lapsi

  • 1/2 cup Wholewheat Flour
  • 1/2 cup jaggery
  • 3/4 cup Jaggery (gur) grated
  • 3/4 cup Pure ghee
  • 1/2 tablespoon Green cardamom powder
  • 8-10 Almonds blanched and slivered

Method

  1. Heat half of the ghee in a kadai. Roast fine wheat flour on low heat till fragrant and golden brown. Heat remaining ghee and roast coarse wheat flour on low heat till fragrant and golden brown.
  2. Meanwhile soak jaggery in two cups of hot water. Stir to break lumps. Cook on low heat till the jaggery is completely dissolved. Place the kadai with roasted flour on low heat and slowly pour in jaggery water.
  3. It bubbles immediately so stir briskly and carefully. Add green cardamom powder and stir. Cover and cook on low heat till ghee separates.
  4. Stir well and mix in almond slivers. Serve hot.
