Middle Eastern cuisine comprises of food eaten by the people of the various countries of the Middle East. The cuisine of the region is diverse while having a degree of homogeneity.  Some commonly used ingredients include olives and olive oil, pitas, honey, sesame seeds, dates, sumac, chickpeas, mint and parsley.

Ingredients for Ghotab Recipe

  • Refined flour (maida) 3 cups

  • Oil ¼ cup

  • Castor sugar (caster sugar) ¼ cup + 2 tablespoons

  • Yogurt ½ cup

  • Egg 1

  • Vanilla essence few drops for drizzling

  • Baking powder 1 teaspoon

  • Walnuts ½ cup

  • Cinnamon powder a pinch

  • cardamom powder a pinch

  • Oil for deep-frying

  • Icing sugar for dusting

Method

Step 1

Blend together oil, ¼ cup castor sugar and yogurt till well combined. Add egg and vanilla essence and blend till the egg is well incorporated. Transfer into a bowl.

Step 2

Sift together flour and baking powder into the egg mixture and mix lightly. Cover with a cling film and set aside for 1 hour.

Step 3

Grind the walnuts with 2 tablespoons castor sugar, cardamom powder and cinnamon powder to a coarse powder.

Step 4

Divide the flour mixture into 12 small portions and roll into thick circles. Stuff each with a portion of walnut mixture, bring the edges together and seal. Roll into a ball.

Step 5

Heat sufficient oil in a kadai. Deep-fry the balls till golden brown and crisp.

Step 6

Dust icing sugar on top and serve immediately.
