Ingredients for Gluten Free Almond Cake Recipe

  • Almond flour 1 cup

  • Castor sugar 3/4 cup

  • Eggs 3

  • Vanilla essence 1 teaspoon

  • Peanut butter 1/2 cup

  • Cornflour 2 tablespoons

  • Baking powder 1 teaspoon

  • Walnuts chopped 1/2 cup

  • Icing sugar to sprinkle

Method

Step 1

Preheat the oven to 180˚C. Grease a baking tin with butter and dust with cornflour.

Step 2

Take castor sugar in a mixing bowl, break the eggs one by one at a time and add and beat with an electric beater till well combined.

Step 3

Add vanilla essence and peanut butter and mix well.

Step 4

Sieve together almond flour, cornflour and baking powder directly into the bowl and add walnuts and fold in gently till well combined.

Step 5

Pour the batter into the greased tin and spread it evenly. Tap to release any air pockets. Keep the baking tin in the preheated oven and bake for 40-45 minutes.

Step 6

Take the tin out of the oven and keep it on a wire rack and allow it to cool. Cut into squares.

Step 7

Keep the cake squares on a serving platter, dust with icing sugar and serve.
