Turkish cuisine is largely based on Ottoman cuisine, which in turn borrowed many elements from Greek, Central Asian, Caucasian, Sephardi Jewish cuisine, Middle Eastern and Balkan cuisines. Turkish cuisine in turn influenced these as well as other cuisines of  neighbouring countries, including those of Central and Western Europe.

Ingredients for Gozleme Bread Recipe

  • Refined flour (maida) 1 cup + for dusting

  • Fresh yeast 1 tablespoon

  • Castor sugar (caster sugar) a pinch + 1 teaspoon

  • Salt a pinch

  • Olive oil 1 tablespoon

  • Processed cheese grated ½ cup

  • Mozzarella cheese grated ½ cup

  • Red chilli flakes 1 teaspoon

  • Mixed herbs dried 1 teaspoon

  • Crushed black peppercorns to taste

  • Melted butter for greasing


Step 1

Take yeast in a bowl. Add 2 tablespoons warm water and a pinch castor sugar and mix well. Set aside to activate.

Step 2

Combine flour, 1 teaspoon castor sugar, salt and activated yeast in another bowl and mix well. Add sufficient water and knead into dough.

Step 3

Transfer the dough on the worktop, put olive oil on top and knead into soft dough.

Step 4

Dust a bowl with some flour, transfer the dough, cover with damp muslin cloth and set aside to prove for 10-15 minutes.

Step 5

Transfer the proven dough on the worktop, dust some flour on top and roll out to a thick sheet.

Step 6

Cut the sheet into roundels with a medium sized cookie cutter and discard the excess dough.

Step 7

Put processed cheese, mozzarella cheese, chilli flakes and mixed dried herbs in another bowl and mix. Add crushed peppercorns and mix well.

Step 8

Brush some water on each disc, put some cheese mixture in the center, fold into half and press the edges. Seal the edges using the back of a fork.

Step 9

Heat a non-stick pan and grease with some butter. Place the prepared breads and cook, turning sides, till golden on both sides.

Step 10

Serve hot.
