As these are a good source of fibre and potassium, which keeps all of our body cells functioning properly. Just when you thought that green peas are only used to add that extra punch to your savoury dishes, try a rich, creamy matar ki kheer to satiate your sweet buds too!

Ingredients for Green Pea Mint Soup Recipe

  • Shelled green peas 2 cups

  • Fresh mint leaves 1/2 cup

  • Butter 2 teaspoons

  • Garlic chopped 1 tablespoon

  • Small onion chopped 1

  • Fresh thyme 2-3 sprigs

  • Salt to taste

  • Vegetable stock 4 cups + as required

  • Black pepper powder to taste

  • Fresh cream to garnish


Step 1

Heat butter in a non-stick wok till it melts. Add garlic and sauté till golden brown.

Step 2

Add onion, mix and sauté till translucent. Add 2-3 fresh thyme sprigs, green peas and salt and mix well.

Step 3

Add 4 cups vegetable stock, mix well and let the mixture come to a boil. Reduce heat and cook till the peas are soft and cooked. Discard the thyme sprigs.

Step 4

Add mint leaves and take the pan off the heat. Let the mixture cool down, transfer into a blender jar and blend to a fine puree.

Step 5

Transfer the puree into the same pan and place it back on heat. Add stock as required to adjust the consistency.

Step 6

Add black pepper powder, mix well and let the soup come to a boil.

Step 7

Transfer into a serving bowl, garnish with a swirl of fresh cream and serve hot.
