Grilled Salmon

Ingredients list for Grilled Salmon

  • 250 grams Salmon
  • 1 1/2 tablespoons Crushed black peppercorns
  • 1 tablespoon Olive oil
  • to taste Salt
  • 1½ tablesp Butter
  • 8-10 Shallots chopped
  • 1/2 cup Fish stock
  • 6 tablespoons Tarragon
  • 4 tablespoons Fresh cream
  • 2 tablespoons Fresh parsley chopped
  • 2 Asparagus cut into 2 inch pieces and blanched

Method

  1. Marinate the fish with salt, 1 teaspoon crushed peppercorns and ½ tablespoon olive oil.
  2. Heat 1 tablespoon butter in a non-stick pan. Add shallots and sauté till translucent.
  3. Add fish stock, stir to mix and cook.
  4. Chop 3 tablespoons tarragon and add in the pan alongwith cream and mix well.
  5. Add ¼ cup butter gradually and whisk well to form a homogenous mixture and cook for 10-15 seconds.
  6. Strain the sauce and add parsley and remaining chopped tarragon.
  7. Heat ½ tablespoon butter and remaining olive oil in a non-stick grill pan. Place marinated fish pieces on it and sear for 15-20 seconds on each side.
  8. Add asparagus pieces, salt and remaining crushed peppercorns and cook further.
  9. Heat the prepared sauce.
  10. Place asparagus on a serving plate and put the cooked fish on top. Pour the heated sauce over it and serve immediately.
