History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Grilled Sesame Delight Recipe

  • Brown bread slices 4

  • Sesame seeds (til) 6 tablespoons

  • Butter 2 teaspoons

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Green chillies chopped 2

  • Potatoes boiled, peeled and mashed 3 medium

  • Green peas boiled and crushed 1/4 cup

  • Lemon juice 2 tablespoons

  • Fresh coriander leaves chopped 2 tablespoons

  • Chaat masala 1/2 teaspoon

  • Sugar 1/4 teaspoon

  • Salt to taste


Step 1

Preheat an oven to 180°C.Dry roast sesame seeds in a non-stick pan till fragrant.

Step 2

Remove from heat and set aside.

Step 3

Trim the edges of the bread slices, apply butter on both the sides and grill them in the preheated oven till golden.

Step 4

Heat oil in another non-stick pan, add cumin seeds.

Step 5

When they begin to change colour, add green chillies, potatoes, green peas, lemon juice, coriander leaves, chaat masala, sugar and salt.

Step 6

Mix well and set aside.

Step 7

Divide the potato mixture into four equal portions.

Step 8

Spread them on the toasted bread. Sprinkle the roasted sesame seeds on top.

Step 9

Grill the bread slices in the oven for another two to three minutes. Remove, cut into pieces and serve with tomato ketchup.
