Ingredients list for Grilled Zucchini And Cottage Cheese Rolls
- 1 medium Green zucchini sliced vertically
- 1/2 cup Paneer (cottage cheese) grated
- 1 medium Yellow zucchini sliced vertically
- to taste Salt
- for grilling Oil
- 1/4 cup Walnuts chopped
- 2 tablespoons Parmesan cheese grated
- 1/4 teaspoon Crushed black peppercorns
- 1/4 teaspoon Lemon rind grated
- 2 tablespoons Lemon juice
- a few Fresh mint leaves chopped
Method
- Add salt to zucchini slices and set aside for 5-7 minutes. Place slices on a griller and drizzle little oil on top. Cover and grill on both sides for 2-3 minutes. Remove from heat and cool down to room temperature.
- Mix cottage cheese, walnuts, cheese, crushed peppercorns, salt, lemon rind, lemon juice and mint leaves well in a bowl. Place grilled zucchini slices on worktop.
- Place some cottage cheese mixture on one side of each and roll tightly.
Serve immediately.
