Hak

Hak is the Kashmiri equivalent of saag or greens. Kashmiri style haak is a traditional dish made with a variety of greens like haak, monji haak (kohlrabi greens), mujj haak (radish greens), and vopal haak (dandelion greens).

Ingredients                    

  • 2 bunches spinach                    
  • 1 tsp red chilli powder                
  • ¼ tsp asafoetida                .
  • 1½ tbsps oil                        .
  • ½ tsp cumin seeds                    .
  • ¼ tsp turmeric powder                .
  • Salt to taste                        
  • ½ tsp ver                        .

Method 

  1. Remove stems, wash spinach thoroughly in running water.  Drain and chop finely. 
  2. Mix the red chilli powder in two tablespoons of water and keep aside. Mix the asafoetida in one teaspoon water and keep aside. 
  3. Heat oil in a vessel, add the cumin seeds and allow them to crackle.
  4. Add the asafoetida water, red chilli water, turmeric powder, spinach, salt, one fourth cup water and mix well.
  5. Cook uncovered till all the water has dried and oil surfaces on top.
  6. Sprinkle ver and serve hot.
