Ingredients list for Hazelnut Blondie

  • 2 cups + for dusting Refined flour (maida)
  • 1¼ cups + for greasing Melted butter
  • 1½ cups Castor sugar (caster sugar)
  • 3 Eggs
  • 1 teaspoon Vanilla essence
  • 1 teaspoon Baking powder
  • ½ cup + for garnishing Hazelnuts roasted and chopped
  • 200 grams White chocolate roughly chopped
  • as required Hazelnut-chocolate spread

Method

  1. Preheat oven to 180° C. Grease a square baking tin with some butter and dust with some flour.
  2. Beat together butter and castor sugar till light
  3. Add eggs, one at a time, and beat well. Add vanilla essence and beat till well combined.
  4. Sieve together flour and baking powder into the mixture. Add hazelnuts and mix till well combined. Add chocolate and mix well.
  5. Pour this mixture into the prepared tin and tap. Place the tin in the preheated oven and bake for 35-40 minutes. Remove from oven, cool and demould.
  6. Spread hazelnut-chocolate spread on top. Garnish with hazelnuts and serve.
