Hot Caramel Mango

Mango baked by topping with cream,brown sugar and castor sugar and served with wafer biscuits. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Hot Caramel Mango

  • 2 large MAngoes
  • 3/4 cup Cream
  • 4 tablespoons Brown sugar
  • 1 tablespoon Castor sugar (caster sugar)
  • 4 Wafer biscuits

Method

  1. Peel and cut mango flesh into thin slices. Whip cream in a bowl with a whisk to make it thick.
  2. Arrange the mango slices on three to four individual dishes and pour the cream over each dish. Sprinkle brown and caster sugar over.
  3. Preheat an oven and place dishes under grill for five minutes or until sugar is caramelized and the mango is warm.
  4. Serve immediately with a wafer biscuit.
