How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Indonesian Coconut Rice Recipe

  • Jasmine rice washed and drained 1 1/2 cups

  • Coconut milk 2 cups

  • Cinnamon 1 inch

  • Lemongrass stalk bruised 1 inch

  • Bay leaf 1

  • Salt to taste

  • Deep-fried onions for garnishing


Step 1

Heat coconut milk in a deep non-stick pan. Add rice and one cup of water and stir well.

Step 2

Add cinnamon, lemongrass, bay leaf and salt and mix well.Cover and cook on medium heat till the rice is fully done.

Step 3

Serve hot garnished with fried onions.
