British cuisine has always been a multicultural - a pot pourri of eclectic styles.  However Britain's culinary expertise is not new! In the past British cooking was amongst the best in the world.  Traditional British cuisine is substantial, yet simple and wholesome. 
British cuisine today has a variety that wipes off the image of grey boiled meat.   In London especially, one can not only experiment with the best of British, but the best of the world as there are many distinct ethnic cuisines to sample, Chinese, Indian, Italian and Greek restaurants are amongst the most popular.

Ingredients for Jaffa Cakes Recipe

  • Refined flour (maida) ½ cup +2 teaspoons

  • Egg 1

  • Castor sugar (caster sugar) 1/2 cup

  • Butter for greasing

  • Orange marmalade 250 grams

  • Dark chocolate chopped 1 cup

  • Finely grated zest of ½ orange

  • Oil 2 teaspoons

Method

Step 1

Preheat oven to 180°C.

Step 2

Cream together egg and castor sugar till thick and creamy. Add flour and fold it in.

Step 3

Grease a 12-hole jam tart mould with some butter and put one tablespoon of mixture in each hole. Place the mould in the preheated oven and bake for ten minutes. Remove from oven, cool and de-mould.

Step 4

Cut each cake horizontally into half.

Step 5

Heat marmalade in a non-stick pan for a few minutes or till it thickens and is spreadable. Remove from heat and cool. Spread a dollop of marmalade over each cake half.

Step 6

Melt chocolate with orange zest, oil and one tablespoon water in a bowl over a double boiler, stirring continuously. Take the bowl off the double boiler and keep stirring till it cools and the mixture starts to thicken. Spread this over the marmalade layer. Keep them in the refrigerator to set.

Step 7

Serve.
