Heat ghee in a non-stick pan, fry cashewnuts and raisins till golden. Add carrots and cloves and sauté for five minutes. Add rice and mix well. Add jaggery water and green cardamom powder, mix and cover and cook till rice is done. Serve hot garnished with grated coconut.
