A favourite with the vegetarians, paneer made from milk is quite common, especially paneer recipes are quite popular in the Indian subcontinent. You can make it fresh, chhena – an another version or just use the ones that are readily available in the market to prepare everything from simple snacks, curries, sabzis, mithais, desserts and the likes. An ingredient that can be relished in the raw form too – try serving it as a starter just sprinkled with a little chaat masala, black salt and chilli powder!

Ingredients for Junglee Paneer Sandwich - SK Khazana Recipe

  • Paneer (cottage cheese) cut into small cubes 300 grams

  • White bread slices 8

  • Carrots grated 2 medium

  • Onion chopped 1 medium

  • Green chilli chopped 1

  • coriander leaves chopped 2 tablespoons

  • Green chutney 2 1/2 tablespoons

  • Salt to taste

  • Mayonnaise 2 tablespoons

  • Butter as required

  • French fries to serve

  • Tomato ketchup to serve

Method

Step 1

Take cottage cheese cubes in a large bowl, add carrots, onion, green chilli, coriander leaves, green chutney, salt and mayonnaise and mix well.

Step 2

Apply butter on one side of all the bread slices, place a portion of the stuffing on 4 slices and cover with the remaining slices with the butter side facing down.

Step 3

Heat a griller. Apply butter on top of all the sandwiches, place them, butter side downwards, and apply butter on the other side too.

Step 4

Grill till the sandwiches till golden and crisp on both sides.

Step 5

Cut them into triangles and transfer them onto a serving plate. Serve hot with French fries and tomato ketchup.
