You should always stack your fridge with at least a dozen of them. Why? Handiest food to have around! Kids are hungry? Make some egg sandwiches. Guests come in, make an egg curry or egg biryani. You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Kebab Omelette - SK Khazana Recipe

  • Eggs 8

  • Chicken seekh kebabs 8

  • Salt to taste

  • Black peppercorns crushed to taste

  • Chaat masala 1 teaspoon

  • Green chillies chopped 2

  • Medium onions chopped 2

  • Medium tomatoes chopped 2

  • Fresh coriander leaves chopepd 4 tablespoons

  • Butter 4 tablespoons

  • Oil 2 teaspoons

  • White bread slices 8

  • Tomato ketchup to serve

Method

Step 1

Break 4 eggs into a bowl, add salt, crushed black peppercorns, ½ tsp chaat masala, half the green chillies, half the onion, half the tomatoes and the coriander leaves and whisk well with a fork.

Step 2

Heat 1 tsp butter along with a little oil in a tawa, pour the egg mixture and let it spread evenly.

Step 3

Place 2 bread slices over the eggs and let them soak some of the egg mixture from both sides. Remove these bread slices and place 2 more slices and let them soak some of the egg mixture.

Step 4

Flip the omelette, place 4 seekh kebab in the centre and fold the omelette over from both sides and cook till the base is cooked completely.

Step 5

Flip the entire omelette. Place 4 seekh kebab in the middle and fold both the sides of the omelette over them.

Step 6

Place the 1st 2 slices over the folded omelette and press lightly. Flip and cook for 1-2 minutes. Similarly make more sandwiches with the remaining ingredients in the same way.

Step 7

Divide each sandwich into 2 triangles. Arrange them on a serving platter and serve hot with tomato ketchup.
