Ingredients for Kiwi Lime Muffins Recipe

  • Kiwi 1

  • Lemon zest grated 1 teaspoon

  • Ripe banana 1

  • Refined flour (maida) 1 2/3 cups

  • Baking soda 1 teaspoon

  • Baking powder 1 teaspoon

  • Eggs 3

  • Powdered sugar 170 grams

  • Vanilla essence 1 teaspoon

  • Rooh Afza 3 tablespoons

  • Melted butter 2/3 cup

Method

Step 1

Preheat the oven at 220°C. Blend kiwi and banana into a purée.

Step 2

Sieve together refined flour, baking soda and baking powder into a bowl.

Step 3

In another bowl break eggs, add sugar, little by little, and whisk well.

Step 4

Add vanilla essence, rooh afza , melted butter, banana-kiwi purée and flour. Fold in the mixture in cut and fold method.

Step 5

Pour the batter into silicon moulds and sprinkle some lemon zest on top.

Step 6

Bake in the preheated oven at 180°C for 20 to 22 minutes.

Step 7

Remove from oven and cool. Remove from the moulds and serve.
