History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Lasoon Sev Recipe

  • Garlic (lehsun) powder 2 1/2 teaspoons

  • Gram flour (besan) 2 cups

  • Salt to taste

  • Turmeric powder 1/4 teaspoon

  • Carom seeds (ajwain) 1/2 teaspoons

  • Oil 1/4 cup + for deep-frying

Method

Step 1

Put gram flour in a bowl, add salt, turmeric powder and carom seeds and mix well. Heat one-fourth cup of oil and add and knead into a stiff dough with sufficient water. Rest the dough for half an hour.

Step 2

Heat sufficient oil in a kadai.

Step 3

Put some dough into a sev mould and press out sev directly into hot oil. Deep-fry, stirring occasionally with a slotted spoon, till golden. Drain on absorbent paper. Sprinkle the garlic powder on top and toss.

Step 4

Cool and store in an airtight container.
