Ingredients list for Lemon Pasta Soup

  • 2 Lemons
  • 2 cups Macaroni boiled
  • 1 Kaffir lime leaf
  • 5 cups Vegetable stock
  • 1 Spring onion
  • 2 tablespoons Carrot finely chopped
  • 2 tablespoons Sweet corn kernels boiled
  • 2 tablespoons Mushrooms chopped
  • to taste Salt
  • 1 Fresh red chilli slit
  • 2-3 florets Broccoli cut into small pieces
  • 2 teaspoons Cornflour slurry

Method

  1. Heat vegetable stock in a deep non-stick pan, tear lime leaf and add.
  2. Slice spring onion and add to the pan. Add carrot, corn, mushroom, salt and fresh red chilli and let the mixture come to a boil.
  3. Add macaroni and mix. Cut broccoli into small florets.
  4. Add cornflour slurry and mix and cook for 2-3 minutes. Add broccoli and mix.
  5. Squeeze the juice of ½ lemon in each of 4 soup bowls, pour the soup equally into them and serve piping hot.
