Fundamentally an aromatic marriage of centuries – old Eastern and Western influences, the chief characteristics being who cooks it, for whom it is cooked, for what occasion and where it is cooked. In short Thai dishes can be extremely personal to the cook, how they are refined for particular tastes, how they befit a special function or festival and where they originate. The cuisine has its roots in a waterborne lifestyle, with aquatic animals, plants and herbs as major ingredients.
Thai cuisine is inextricably interwoven with culture, a mystical mix of fragrant flavours and intriguing history:  given the country’s historical Indian roots - Hindu Buddhism was bought here centuries ago, so many Thai curries are redolent with chillies, garlic, cardamom, cloves, cinnamon, and onions.

Ingredients for Lemon Pasta Soup Recipe

  • Lemons 2

  • Macaroni boiled 2 cups

  • Kaffir lime leaf 1

  • Vegetable stock 5 cups

  • Spring onion 1

  • Carrot finely chopped 2 tablespoons

  • Sweet corn kernels boiled 2 tablespoons

  • Mushrooms chopped 2 tablespoons

  • Salt to taste

  • Fresh red chilli slit 1

  • Broccoli cut into small pieces 2-3 florets

  • Cornflour slurry 2 teaspoons

Method

Step 1

Heat vegetable stock in a deep non-stick pan, tear lime leaf and add.

Step 2

Slice spring onion and add to the pan. Add carrot, corn, mushroom, salt and fresh red chilli and let the mixture come to a boil.

Step 3

Add macaroni and mix. Cut broccoli into small florets.

Step 4

Add cornflour slurry and mix and cook for 2-3 minutes. Add broccoli and mix.

Step 5

Squeeze the juice of ½ lemon in each of 4 soup bowls, pour the soup equally into them and serve piping hot.
