Ingredients for Lemon Pepper Pasta Recipe

  • Penne pasta boiled 200 grams

  • Red capsicums 1

  • Lemon zest 1 teaspoon

  • Pickled jalapenos 2

  • Red capsicum 1 medium

  • Black peppercorns crushed 1 teaspoon

  • Extra virgin olive oil 2 tablespoons

  • Sundried tomatoes 5-6

  • Garlic chopped 2 tablespoons

  • Salt to taste


Step 1

Heat extra virgin olive oil in a non stick pan. Roughly chop red capsicum (pepper) and put into a blender jar. Add sundried tomatoes and a little water and blend into a puree.

Step 2

Add garlic to the pan and sauté till golden brown. Chop jalapeno peppers. Add the puree to the pan and mix well. Add salt and pasta and mix well.

Step 3

Add crushed peppercorns and lemon zest and mix well. Squeeze the juice of a lemon and add and mix well. Transfer into a serving dish, garnish with jalapenos and serve hot.
