Ingredients list for Lemon Star Cookies
- 4 Lemons
- 2½ cups Refined flour (maida)
- 1 cup Castor sugar (caster sugar)
- ¾ cup Butter
- 3 Eggs
- 1 teaspoon Vanilla essence
- ¼ cup brown sugar/jaggery
Method
- Put butter and sugar in a large bowl and beat till it is light and creamy.
- Add 2 eggs, one by one, and keep on beating.
- Add vanilla essence, zest of all lemons and juice of half lemon and mix all together nicely.
- Add refined flour and fold it in to make a dough. Refrigerate for 2 hours.
- Preheat oven to 180°C.
- Remove and roll it into 1cm thin sheet and cut star shaped cookies with a cookie cutter.
- Make a dentin the centre of the cookies with the edge of the rolling pin and sprinkle brown sugar into it.
- Break remaining egg into a bowl and beat it nicely. Brush it on the edges of the stars.
- Place them on a baking tray, place the tray in the preheated oven and bake for 10-15 minutes. Remove from oven and cool down to room temperature.
- Serve.
