Lobio Red kidney beans and mushrooms cooked with tomato puree This recipe is from FoodFood TV channel By Sanjeev Kapoor 07 Mar 2017 in Recipes Course New Update Main Ingredients Kidney Beans, Mushrooms Cuisine Georgian Course Main Course Vegetarian Prep Time 11-15 minutes Cook time 21-25 minutes Serve 4 Taste Mild Level of Cooking Moderate Others Veg Ingredients list for Lobio 200 grams Kidney Beans soaked and boiled 200 grams Mushrooms sliced 4 tablespoons Oil 1 Bay leaf 3 medium Onions thinly sliced 1 teaspoon Paprika to taste Salt a pinch Red chilli powder 2 tablespoons Tomato puree 1 medium Red capsicum thinly sliced Method Heat oil in a non stick pan, add bay leaf and onions and saute till transluscent. Add mushrooms, kidney beans and the water in which the beans were boiled and mix well. Add paprika, salt and red chilli powder and mix well. Cook for 2 minutes. Add tomato puree and red capsicum and mix well. Cover and cook for 2-3 minutes. Mash coarsely with a hand blender. Serve in a Georgian clay pot.
