Ingredients for Mangodi Palak Recipe

  • Moong Mangodi 1 cup

  • Fresh spinach blanched and pureed 300 grams

  • Oil 2 tablespoons

  • Onions chopped 2 medium

  • Garlic cloves chopped 10

  • Ginger chopped 1 1/2 inch pieces

  • Red chilli powder 1 teaspoon

  • Salt to taste

  • Garam masala powder 1/2 teaspoon

  • Fenugreek leaves (methi) dried 1 teaspoon

  • Cream 2 teaspoons

Method

Step 1

Heat 2 tbsps oil in a non stick pan, add mangodi and saute till lightly browned. Drain and set aside.

Step 2

Heat 2 tbsps oil in the pan and add onions, garlic and ginger and saute till lightly browned. Add red chilli powder and mix. Add mangodi and 1 cup water and let it cook for 3-4 minutes.

Step 3

Add salt, garam masala powder, kasoorimethi and mix well.

Step 4

Add palak puree and mix and cook for 1 minute. Add fresh cream and mix well.Serve hot.
